Japanese Green Sencha Tea

Sencha is very highly regarded in Japan and the Japanese people believe that by drinking Sencha tea, which are the first picked tea leaves of the season, they will enjoy a years good health!

The flavour of the liquor will vary depending on the temperature of the water used; water off the boil for two minutes will produce a mellow flavour whereas hotter water will provide more astringency. 

The Sencha leaves are steamed after picking which, as well as preventing oxidation, imparts a difference in the flavour between Chinese and Japanese green tea, with Japanese green tea having a more vegetal, almost grassy flavour.
